Made some tasty Black Eyed Pea cakes the other night and you have to make some too if you know what's good for you.
1 teaspoon olive oil
1/4 cup chopped green onions
1/2 teaspoon grated lemon rind
1/2 teaspoon minced fresh thyme
1 garlic clove, minced
2 1/2 cups black-eyed peas,
1 tablespoon dry breadcrumbs
1 tablespoon chopped fresh parsley
2 teaspoons Dijon mustard
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground red pepper
1/4 cup cornmeal
1 tablespoon cookin' oil ( I like peanut oil)
Sautee up your scallions, lemon rind and garlic.
Throw the sauteed mixture along with just over half the peas, breadcrumbs, parsley, mustard and pepper into a food processor and pulse it into a good mash.
Add the mash to the rest of the beans and from into patties.
(If it's too sloppy add an egg or enough egg replacer to bind it together.)
Dredge the little cakes through the cornmeal and put them on a baking sheet and put these in the fridge for at least 15 minutes so they set.
Heat up some cooking oil, I like peanut oil and fry 2-4 minute on each side so their nice an blackened.
These go real nice with greens or on a bun and super shit awesome with tabouleh. Better yet mix it all up and throw it on a bun or in a pita.
