    Baristas and Roaster sound off!

    Hello.
    Jeremy Stinkbot.
    Barista four years
    Whole Foods coffee buyer three years.
    I love espresso because of its magical properties.
    We use a LaMarzocco Strada EE 3 Group
    3 Mazzer doser-less grinders for our espresso.
    Weigh dose on Acaia pearl.
    and Yield on Acaia Lunar.

    Our coffee is roasted on a Loring Falcon S15

    What's your set up?

    oh...and it's a regular coffer dripper...just bought a new French press from ikea yesterday! looking forward to a good bean outta that beast!

    This here's my Chemex. It was a birthday present four years ago. I made it vegan by removing the leather strip and replacing that with cotton chord.
    It's super delightful and makes me happy every day.

    This is our roasting facility. It's in the middle of a cafe situated inside a Whole Foods.
    We have to cup first thing in the morning before people start bring food in to the cafe and stinking up the place.

    I mostly roast. At Gimme Coffee I use a Probat 45k and Probat 5k, both from late 40s/early 50s and a Probat BRZ2 sample roaster. At home I'm rebuilding a Diedrich IR12 from the 80s. At my barista job, we use an old Faema 3 group e61 espresso machine. It's pre digital and we pull triple ristretto shots that would make the SCA cringe.

    Heart coffee's espresso parameters would make the SCA cringe, but that shit is beautiful! I love the SCA and I'm a member of the Guild, but taste will always win out over math.
    Here's my Kalita Wave, series 155 along with my Acaia Pearl scale and Baratza Encore grinder.
    This is the Three Africans from Blue Bottle. 15g dose, with 200g water at 203f. Brew time 3 minutes. Delicious.

    I use a black Acaia scale at work, but haven't used the app yet. At home I use one of the Hario scales at home.
